Ginger-Glazed Carrots

  • 1 bunch carrots
  • 1 1/2 T. raw sesame or olive oil
  • 2 T. finely grated ginger
  • 2 cloves garlic, pressed
  • 2 T. soy sauce
  • 1 T. brown rice syrup OR 2 t. maple syrup
  1. Preheat oven to 350.
  2. Slice carrots 1/4" thick on an angle and fold carrots into glaze marinade made with the remaining ingredients.
  3. Place in a glass casserole dish, cover with lid, and bake 15 minutes.
  4. Uncover, stir, and bake uncovered another 10 to 15 minutes until tender.
  5. Season to taste with salt.
