Ginger-Glazed Carrots
- 1 bunch carrots
- 1 1/2 T. raw sesame or olive oil
- 2 T. finely grated ginger
- 2 cloves garlic, pressed
- 2 T. soy sauce
- 1 T. brown rice syrup OR 2 t. maple syrup
- Preheat oven to 350.
- Slice carrots 1/4" thick on an angle and fold carrots into glaze marinade made with the remaining ingredients.
- Place in a glass casserole dish, cover with lid, and bake 15 minutes.
- Uncover, stir, and bake uncovered another 10 to 15 minutes until tender.
- Season to taste with salt.
