Roasted Red Pepper and Carmelized Onion Sauce

This sauce is ideal on pizza. It can also be used on noodles.

  • 2 large red peppers
  • 1 large onion
  • 1/4 c. white wine or vegetable stock
  • 1 t. balsamic vinegar
  • 1 t. soy sauce
  • 1/2 t. maple syrup
  • 2 T. pinenuts
  • 2 cloves garlic
  • 1 c. fresh basil
  • 2 t. dried oregano
  • 1 t. dried thyme
  • 1 t. apple cider vinegar
  • salt
  • pepper
  • dried chili pepper (to taste)
  1. Slice peppers into thick pieces and coat in olive oil. Roast them in the oven at 450.
  2. Cook onions until soft, then add white wine or vegetable stock, vinegar, soy sauce, and maple syrup. Cook until liquid has evaporated.
  3. Blend peppers and onions in a food processor along with remaining ingredients.
