Roasted Red Pepper and Carmelized Onion Sauce
This sauce is ideal on pizza. It can also be used on noodles.
- 2 large red peppers
- 1 large onion
- 1/4 c. white wine or vegetable stock
- 1 t. balsamic vinegar
- 1 t. soy sauce
- 1/2 t. maple syrup
- 2 T. pinenuts
- 2 cloves garlic
- 1 c. fresh basil
- 2 t. dried oregano
- 1 t. dried thyme
- 1 t. apple cider vinegar
- salt
- pepper
- dried chili pepper (to taste)
- Slice peppers into thick pieces and coat in olive oil. Roast them in the oven at 450.
- Cook onions until soft, then add white wine or vegetable stock, vinegar, soy sauce, and maple syrup. Cook until liquid has evaporated.
- Blend peppers and onions in a food processor along with remaining ingredients.
