Simple and Sumptuous Steamed Greens

From Renee Loux in her book The Balanced Plate.

  • 6 c. chopped chard (or kale, spinach, etc.)
  • 2 tbsp olive oil
  • 2 tsp umeboshi plum vinegar
  • 2 tsp soy sauce
  • 1 tsp liquid sweetener (agave, maple)
  • minced onion
  • pressed garlic
  • grated ginger
  • pinch of marjoram
  1. Steam chopped greens (Use steamer basket and big pot with fitting lid, turn greens while steaming so as to steam evenly, and just until bright green; will turn dull green if overdone)
  2. In bowl prepare dressing using remaining ingredients
  3. Toss steamed greens into bowl with dressing and serve!
