Simple and Sumptuous Steamed Greens
From Renee Loux in her book The Balanced Plate.
- 6 c. chopped chard (or kale, spinach, etc.)
- 2 tbsp olive oil
- 2 tsp umeboshi plum vinegar
- 2 tsp soy sauce
- 1 tsp liquid sweetener (agave, maple)
- minced onion
- pressed garlic
- grated ginger
- pinch of marjoram
- Steam chopped greens (Use steamer basket and big pot with fitting lid, turn greens while steaming so as to steam evenly, and just until bright green; will turn dull green if overdone)
- In bowl prepare dressing using remaining ingredients
- Toss steamed greens into bowl with dressing and serve!
